Production of oligomeric procyanidins by mild steam explosion treatment of grape seeds

Abstract Background Sixty five percent of procyanidins in grape seeds is polymeric (PPC), and they could not be assimilated directly by human. To enhance procyanidin assimilation, steam explosion treatment (SE) was used to facilitate the preparation oligomeric (OPC) from seeds. Results The results indicate that SE made loose porous, decreased mean degree polymerization (mDP) procyanidins. content total phenolic (TPC) were with increase severity, while amount catechin (CA), epicatechin (EC) epicatechin-3-O-gallate (ECG) increased, resulting significant antioxidant activity. Conclusions Although depolymerize PPC produce CA/EC/ECG high yield, it caused yield loss a potential effective method prepare low However, still needs study further how balance monomers (CA/EC/ECG).
